2 1/2 cups crushed pineapple, drained |
1 1/2 cups sugar |
1/2 teaspoon salt |
2 teaspoons baking soda |
2 eggs |
2 1/2 cups flour |
1 cup evaporated milk |
1/2 cup chopped pecans |
1 cup coconut |
1 cup sugar |
1/4 lb margarine |
Directions:
1. Cake:. 2. Combine all ingredients and mix well. Pour into 8x12 inch baking pan that is well greased. Bake at 350F for 30 minutes. 3. Icing: 4. Heat sugar, margarine and milk to boiling. Stir once. Boil for 7 minutes, add coconut and pecans. Beat until thick and cool. Pour over cake while still in pan. Cut into squares and serve. |
