From my Pol Martin cookbook. Freeze and use as needed. Ingredients:
1/4 teaspoon black pepper |
1/4 teaspoon white pepper |
1/4 teaspoon sage |
1 teaspoon jalapeno pepper, chopped |
2 garlic cloves, peeled and pureed |
1/2 lb unsalted butter, soft |
1 pinch cayenne pepper |
1/2 lemon, juice of |
salt |
Directions:
1. mix spices, jalapeno pepper and garlic in a bowl. add butter and mix well 2. season with lemon juice and mix again. 3. place butter on double sheet of aluminum foil. 4. roll in a cylindrical shape and twist ends tightly. 5. freeze and use as needed. |
