Ingredients:
1 cup oatmeal
2 tsp vanilla extract
1/2 cup soy milk
1/4 cup egg beaters
1/4 cup unsweetened applesauce
1/2 tsp oil
1 cup whole wheat flour
1 tbsp baking powder
1/2 tsp baking soda
1/4 tsp ginger
1/8 tsp nutmeg
3/4 cup frozen blueberries
2 tsp cinnamon
1 pinch of salt
1/4 cup brown sugar
Directions:
1. Preheat oven to 400
2. mix dry igredients, add wet ingredients
3. put in to muffin pan
4. cook until done
