Caipirinha - Brazilian Rum Cocktail

This drink is a unique Brazilian mix of limes and their sugar cane rum called cachaca. Simple, citric and refreshing.
Ingredients:
1 fruit lime
1 1/2 fl oz rum, distilled 80 proof
1 tbsp sugar, cane
2 tbsp water
1/2 cup ice, crushed
Directions:
1. Cut up the lime in 3/4 cubes.
2. Muddle cubbed lime with sugar. Do not over do it to avoid bitterness due to lime rinds. (rinds should never be peeled off.)
3. Pour over a shaker.
4. Pour the rum (Cachaca) in the muddling container, swish it and pour into the shaker.
5. Add ice and water.
6. Shake vigorously for about 30 seconds.
7. Pour and serve.
