Chimichurri is a popular Argentinian green sauce that may also be used as a marinade for grilled meat and seafood. At Cafe YK we will use this delightful sauce for grilled halibut and chicken. Ingredients:
1 cup shallot, diced |
1 tablespoon garlic, minced |
1/4 cup white wine vinegar |
1/4 cup lemon juice, fresh |
1 tablespoon fresh thyme leave |
1 tablespoon fresh oregano |
1 cup flat leaf parsley, fresh |
1 tablespoon dried chipotle powder |
1 cup extra virgin olive oil |
salt and pepper |
Directions:
1. Mix together vinegar, lemon juice, shallots and garlic. 2. Let stand for 30 minutes before continuing. 3. Finely chop herbs and mix with garlic and shallots and vinegar mixture. 4. Whisk in chipotle and extra virgin olive oil. 5. Your Chimichurri should be thick and sauce-like with a good amount of acidic and highly seasoned, flavor. |
