~Sometimes served before the main dish,although I have always served them with the main course,when made~ Ingredients:
3 cups milk |
1 cup semolina |
2 fresh eggs,beaten very well |
1 tablespoons butter |
1 teaspoon salt |
pinch of pepper |
1/4 cup butter |
1 cup parmesan cheese,grated |
Directions:
1. Scald milk in saucepan. 2. Reduce heat and slowly sprinkle the semolina into the hot milk,stir all the time. 3. Cook,stir constantly,until very thick,about 8 minutes.(Your spoon should stand upright in mixture) 4. Stir in eggs,1 tablespoon butter,salt,pepper,beat until smooth. 5. Spread mixture into a greased pan,13 x9 will do quite nicely. 6. Cool,cover and refrigerate for about 4 hours. 7. Cut semolina mixture with a circle cookie cutter(about 1-1/2 )dipped in water to keep from sticking. 8. Place the little cakes,overlapping,in a ungreased dish. 9. Dot with 1/4 Cup Butter,sprinkle with the Parmesan Cheese. 10. Bake in a 350 degree oven until crisp and brown,about 35 minutes. |
