As per Cook's Illustrated Ingredients:
1/3 cup grated parmesan cheese |
1/4 cup buttermilk |
3 tbl fresh lemon juice |
6 anchovy fillets, rinsed & patted dry |
2 tsp worcestershire |
2 tsp dijon mustard |
2 garlic cloves, minced |
1/2 tsp salt |
1/2 tsp pepper |
1/2 cup olive oil |
Directions:
1. Blend all ingredients except oil in a blender until smooth, scraping down the sides as needed. 2. While motor is running, add oil in a steady stream. |
