Classic dressing for your caesar salad. Ingredients:
4 egg yolks |
2 garlic cloves minced |
2 heaped tsp dijon mustard |
2 anchovy fillets |
splash tabasco |
splash worchester sauce |
juice of 1 lime (better than lemon in this one) |
groundnut oil 4 floz |
olive oil 8- 12 floz |
salt & pepper |
little warm water to add at end if too thick |
Directions:
1. In a food processor put dijon, garlic, eggs, anchovy, tabasco & worchester sauce. Whizz for about a min 2. Add lime juice pulse 3. With the machine running add the oil in a slow gradual stream until 4. all incorporated. 5. If dressing is too thick add a little warm water |
