My variation on caesar dressing, served over 1 large head of romaine lettuce, 1/2 cup shaved fresh parmesan cheese, 1 cup of croutons...mmmmm Ingredients:
1 1/2 teaspoons garlic, minced |
1 1/2 teaspoons anchovy paste |
2 tablespoons egg substitute |
1 tablespoon white wine vinegar |
2 teaspoons red wine vinegar |
1 1/2 teaspoons dijon mustard |
1 teaspoon worcestershire sauce |
1/4 teaspoon salt |
1 tablespoon fresh lemon juice |
1/4 cup parmesan cheese, grated |
3/4 cup olive oil |
Directions:
1. Mix first 10 ingredients using an emulsion blender (or in a regular blender). 2. Slowly add oil and mix until fully emulsified. 3. Serve immediately. |
