Caesar Chicken Pasta Salad |

No BORING pasta salad here! Lots of crunch, zip, cheese, and tons of flavor. You could even make a main dish out of this and serve with sliced tomatoes in the summer. Ingredients:
1 pound penne pasta, cooked and drained |
3 eggs, hard-boiled |
1/2 red pepper, cut into thin slivers |
1/2 yellow bell pepper, cut into thin slivers |
1/4 cup red onion, diced |
1/2 cup parmesan cheese, freshly grated |
1/4 cup fresh parsley, finely minced |
2 chicken breasts, pre-roasted from the store, shredded (save rest of chicken for another use) |
1 cup caesar salad dressing, cardini's - use more or less depending on how moist you want the salad |
Directions:
1. Toss all ingredients together, refrigerate until 1/2 hour before serving time. 2. NOTE: Use gluten-free penne pasta to make this gluten-free. |
