This is a recipe from the Eating Better Cookbook. My daughter loves this and insists every week that I make it. I hope you like it. If you use thin cut chicken breast or pound out your chicken breast reduce the total cooking time to 35-40 minutes. Ingredients:
4 boneless skinless chicken breasts |
1 cup caesar salad dressing (original recipe calls for marie calendars, i use lite house) |
1/4 cup mayonnaise |
1/2 cup parmesan cheese, freshly grated |
4 zucchini, shredded |
1 tablespoon butter |
1 garlic clove, minced |
Directions:
1. Preheat oven to 375 degrees. 2. Place chicken in baking dish. 3. Mix together salad dressing, mayonnaise and cheese. Spread evenly over chicken. 4. Cover and bake 1/2 hour. 5. Uncover and bake 1/2 hour more. 6. Saute zucchini in buter and garlic until tender. 7. Place mound of zucchini on plate, top with chicken breast and drizzle sauce over all. |
