This makes one serving, but can easily be multiplied for more. Ingredients:
1 cod, haddock or tilapia filet |
2 tablespoons mayonnaise |
1 tablespoon parmesan cheese, grated |
1 1/2 teaspoons lemon juice |
1/4 teaspoon salt, or to taste |
dash ground black pepper |
1/4 cup fresh breadcrumbs |
2 tablespoons fresh parsley, minced |
lemon wedges |
Directions:
1. Preheat oven to 450 degrees. 2. Place fish filet in greased baking dish. 3. Combine mayonnaise, Parmesan, lemon juice, salt and pepper. 4. Spread over fish filet. 5. Combine breadcrumbs and parsley. 6. Sprinkle over fish. 7. Bake about 10 minutes or until fish flakes easily and crumbs begin to brown. 8. Serve with lemon wedges. |
