Jeremy this is for you. Ingredients:
3 dozen fresh oysters |
10 oz. champagne |
4 shallots, finely chopped |
dash of pepper |
2 to 3 tsp. fresh lemon juice |
3 egg yolks, well beaten |
1/4 cup butter |
Directions:
1. Shuck and rinse oysters and return to cleaned half shells. 2. In a heavy saucepan simmer 8 oz. of champagne, shallots and pepper until champagne almost evaporates. 3. Mix lemon juice, remaining champagne and egg yolks. 4. Pour on reduced mixture and thicken over low heat. 5. Add butter in small amounts and whisk until blended. 6. Pour over oysters and broil until bubbly and brown. |
