Learned to make these many years ago by watching an elderly neighbor . Ingredients:
2/3 cup nopales, rinsed, dried and chopped |
4 eggs, whisked |
2 tablespoons salsa de chile fresco or 2 tablespoons salsa, of your choice |
1/3 cup colby-monterey jack cheese, grated |
2 flour tortillas |
Directions:
1. In large frying pan scramble Nopales, eggs, and Chile Fresco together. When eggs are set place in tortillas and top with cheese. |
