Ingredients:
5 ears corn on the cob
1 large onion, sliced
1/4 lb linguica sausage, sliced (portuguese smoked sausage)
1/4 squash, diced
1/2 lb fava beans (or lima beans)
2 ripe tomatoes, diced
2 tablespoons olive oil
2 peppercorns
3 -4 cups water
1 bunch of flat leaf coriander
Directions:
1. Scrape off the fresh corn kernels into a boiler pot.
2. Add to the corn the squash, fava beans, tomatoes, and peppercorns and enough water to cover
3. Gently saute onion, linguica, and pepper in olive oil; add to corn pot.
4. Bring to a boil.
5. Reduce heat and let simmer until tender.
6. Prior to serving, season with salt and garnish with chopped flat leaf coriander (cilantro).
