From a collection of old Welsh cake recipes purchased in Wales in 1992. Ingredients:
8 ounces flour |
1/2 teaspoon baking powder |
4 ounces butter |
4 ounces brown sugar |
8 ounces dried fruit, mixed |
1 tablespoon orange peel, candied |
1/4 pint buttermilk |
Directions:
1. Preheat oven to 350°F. 2. Sift the flour and baking powder and rub in the butter. 3. Add the dried fruit. 4. Mix to a fairly stiff consistency with the buttermilk. 5. Line a cake tin and bake at 350 F for about 1 hour. |
