Cabbage With Potato Slices Casserole |

I was looking for something a bit different to make with cabbage for our family reunion this year, which was yesterday, 9/21/08. I came across a few different recipes and none of them seemed to be just right. So I tried some ideas from a few of them and came up with this one. I doubled the recipe and there were only side scrapings left on the pan at the reunion. I thought it tasted really, really good. Try it for yourself. If you precook the potatoes and cabbage the day before it doesn't take long at all to put it all together. Ingredients:
6 peeled potatoes |
1 cup diced onion |
4 cups shredded partially cooked cabbage |
2 tablespoons butter |
10 3/4 ounces cream of celery soup |
1/2 cup salad dressing |
3/4 cup milk |
1 cup shredded provolone cheese |
1 cup shredded monterey jack cheese |
Directions:
1. Cook whole potatoes until almost done. 2. Let cool,. 3. then slice on the thin side and set aside. 4. Saute onion in butter. 5. Add soup, dressing and milk. 6. and mix well. 7. Combine with cabbage. 8. Coat a 3 quart baking dish with cooking spray. 9. Place 1/2 the cabbage in the bottom, 10. then 1/2 the potatoes 11. and then sprinkle with 1/2 of each 12. of the cheeses. 13. Repeat. 14. Bake at 350 for 30 minutes or 15. until potatoes and cabbage are tender. |
