Cabbage with Apple Coleslaw |

Ingredients:
1 lb shredded green cabbage |
1/4 cup chopped red onion |
2 granny smith apples, chopped |
1/2 cup chopped walnuts |
1/4 cup cider vinegar |
1/4 cup apple juice or 1/4 cup cider |
1 1/2 teaspoons honey |
1 tablespoon finely chopped fresh parsley |
salt and pepper |
Directions:
1. In a large bowl, combine first 4 ingredients. 2. In a small bowl, whisk together the vinegar, apple juice and honey. 3. Add salt and pepper to taste. 4. Pour dressing on vegetables and toss. 5. Chill until ready to serve. 6. Garnish with fresh parsley. |
