Low calorie cabbage soup made in crock pot. Serving size is 1 cup. Although I usually eat 2 cups for a meal. Ingredients:
2 lbs shredded cabbage |
3 stalks celery |
1 green pepper |
1 red pepper |
1 onion, medium |
28 ounce diced tomatoes |
4 cups vegetable broth |
1 tbsp parsley |
2 tsp thyme |
1/4 tsp garlic powder |
Directions:
1. Place cabbage in slow cooker. 2. Add 3 stalks celery, thinly sliced. Add green and red pepper (seeded and chopped). Add one medium onion (chopped). 3. Stir in 28 ounce can diced tomatoes. 4. Add remaining seasonings. 5. Add salt and pepper to taste. 6. Cover and cook on low until the cabbage is tender 8-12 hours. |
