Cabbage Soup, Valtellina Style |

Cheap, economical, simple and yes of course delicious! Ingredients:
24 ounces savoy cabbage |
salt |
pepper |
6 slices stale bread, cubed |
9 ounces fontina cheese, cubed |
4 cups chicken stock |
1 1/2 ounces butter |
Directions:
1. Clean, trim and slice cabbage. Place cabbage in saucepan and bring to a boil until the cabbage is tender then drain. 2. In the saucepan place a layer of the cabbage while still warm, then place a layer of bread on top of the cabbage, then a layer of fontina cheese. Continue doing this until you have used up all of the ingredients. Gently press down the ingredients with your ladle. 3. Bring the stock to a boil and pour over the other ingredients. Let soak for about 2-5 minutes. 4. Meanwhile, melt the butter in the microwave or a saucepan. 5. Pour over soup, stir and serve. |
