A low calorie version of the popular cabbage soup diet recipe. Ingredients:
2 lbs shredded cabbage |
3 stalks celery |
1 green bell pepper |
1 red bell pepper |
1 onion, medium |
1 squash |
1 zucchini |
28 ounce diced tomatoes |
4 cups vegetable broth |
1 tbsp parsley |
2 tsp thyme |
1/4 tsp garlic powder |
Directions:
1. Place cabbage in slow cooker with vegetable broth. 2. Add 3 stalks celery, thinly sliced. Add green and red pepper (seeded and chopped). Add one medium onion (chopped) and sliced squash and zucchini. 3. Stir in 28 ounce can diced tomatoes. 4. Add remaining seasonings. 5. Add salt and pepper to taste. 6. Cover and cook on low until the cabbage is tender 8-12 hours. |
