This simple salad is like a Mexican coleslaw. The jalapeño adds a nice touch of heat; use less if you're sensitive to the pepper. Ingredients:
16 cups thinly sliced cabbage |
4 cups thinly sliced onion |
1 cup chopped fresh cilantro |
3 tablespoons fresh lime juice |
1 tablespoon canola oil |
1/2 teaspoon salt |
1 jalapeño pepper, seeded and finely chopped |
