I made up this salad after trying to recreate something I had on a buffet. I eat it as a side to fish or chicken but my husband loves it on top of hotdogs! Ingredients:
1/2 small head cabbage, shredded |
1 clove garlic, minced |
1/4 cup fresh mint, chopped |
3 tbs. parsley, chopped |
3 tbs. fresh lemon juice |
3 tbs. olive oil |
1 tsp salt or less to taste |
2 tsp oregano |
Directions:
1. Put cabbage, garlic , mint and parsley in a bowl. 2. Mix lemon juice, olive oil, salt and oregano in a small bowl. 3. Pour dressing on salad and mix well. |
