Ingredients:
1/2 small red bell pepper |
1/2 small yellow bell pepper |
1/2 small green bell pepper |
1 onion |
2 bacon slices |
2 cups shredded cabbage |
3 tablespoons white vinegar |
1 tablespoon vegetable oil |
1 tablespoon water |
1 1/2 teaspoons brown sugar |
1 1/2 teaspoons dijon mustard |
1/2 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Cut bell peppers into 2-inch-long thin strips; chop onion, and cut bacon into 1-inch pieces. 2. Cook bacon in a large skillet until crisp. Add bell pepper, onion, and cabbage, tossing gently. 3. Combine vinegar and next 6 ingredients in a jar; cover tightly, and shake vigorously. Add to vegetable mixture, stirring gently. Bring to a boil; cover, reduce heat, and simmer, stirring occasionally, 8 minutes or until cabbage is tender. Serve immediately. |
