Love potatoe latkes, but cooking healthy we found a recipe for cabbage latkes, Loved them One thing I found was to preboil cabbage and drain to make more tender
Ingredients:
2 cups finely grated cabbage (preboil and drain well-to tenderize)
1/4 cup egg beaters
liquid egg whites to equal 2 egg whites
1 scallion finely choppped
1 small onion finely chopped
2 tbsp whole wheat flour
salt & pepper to taste
1 tsp garlic powder
1 tsp paprika
1/2 tsp dill
1 tsp parsley or cilantro
Directions:
1. (Braise or preboil grated cabbage to soften) (drain well )
2. In large bowl: mix eggbeaters & egg whites with scallion & onion
3. Add drained cabbage and flour-mix well
4. Add seasonings to taste
5. (If needed add a little more flour to make it easier to handle)
6. Heat 1 tbsp canola oil in non stick skillet over medium high heat
7. With wet hands, form latke (about 1-1/2 in diameter) and fry on both sides till cooked (do not move around till firm crust forms on bottom). Cook 5-8 minutes on each side
8. Wipe skillet between batches and add a little oil if needed only
