CABBAGE KIDNEY BEAN SALAD This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Hamilton Estate in Allen, Texas in 2001. Ingredients:
8 ounce package shall macaroni cooked and drained |
6 cups chopped cabbage |
1/2 cup chopped celery |
1/2 cup green pepper strips |
1/4 cup minced white onion |
2 pounds canned red kidney beans drained |
3 eggs slightly beaten |
1/2 cup granulated sugar |
8 ounce jar prepared mustard |
3 tablespoons butter |
1/2 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
Directions:
1. Toss together macaroni, cabbage, celery, green pepper, onion and kidney beans. 2. Blend together remaining ingredients in top part of double boiler. 3. Cook over simmering water for 5 minutes then pour over vegetables and toss well. |
