Cabbage, Carrot and Veggie Casserole |

Vegan cabbage casserole; very easy Ingredients:
6 cups green cabbage |
1/2 cup bok choy |
1 1/2 cups carrots |
1 1/2 cups mushrooms |
1/4 cup green onion |
1/2 cup leek |
2 red peppers |
1 cup brown rice, uncooked |
2 cups water |
1 tsp basil |
Directions:
1. Chop ingredients. Put the cabbage in simmering water in a large casserole, followed by onions, carrots and other vegetables and finally rice. (I like to keep the rice towards the bottom of the casserole). Simmer for one hour or more, until soft. Veggies can be varied. |
