Cabbage, Bacon and Pomegranate Salad |

A cool crispy salad with pomagranite dressing and maple bacon bits what will satisfy alone or as a side dish. Ingredients:
1 cup chinese cabbage |
1 cup red cabbage |
1 cup mixed salad green |
1 teaspoon fresh garlic |
1/2 sweet onion |
2 tablespoons golden raisins |
4 -6 ounces thick slab bacon |
2 tablespoons maple syrup |
1/3 cup vegetable oil |
2 tablespoons pomegranate red wine vinegar |
2 tablespoons pomegranate concentrate |
1 tablespoon sugar |
1 teaspoon lemon pepper |
salt |
Directions:
1. Start cooking bacon to desired doneness. Drizzle with maple syrup and allow to heat through. 2. Finely slice up cabbages and onion. Toss with field greens and raisins. 3. Next, make your dressing. Mix oil, pomegranate conc, sugar, vinegar and lemon pepper and salt, and garlic. Taste to make personal adjustments before adding to salad. 4. Remove bacon, drain on paper towel. When cool enough to handle, break into desired sized pieces. 5. Mix the salad in the bowl with the dressing, and top with the maple syrup bacon. 6. Regular flavored vinegar can be subsituted. |
