Cabbage and Walnut Stir Fry |

Asian stir fry that makes a good main dish or can be paired with a thai chicken dish. Ingredients:
12 oz white cabbage |
12 oz red cabbage |
4 tbsp peanut oil |
1 tbsp walnut oil |
2 cloves garlic, crushed |
8 scallions, trimmed |
12 oz tofu, cubed |
2 tbsp lemon juice |
1 cup walnuts |
2 tsp dijon mustard |
1 tsp salt |
1 tsp pepper |
Directions:
1. Shred red and white cabbage. 2. Heat peanut and walnut oil. Add garlic, cabbage, scallions and tofu. Cook for about 5 minutes, stirring. 3. Add lemon juice, walnuts, mustard and salt and pepper. Cook until cabbace is tender, about 5 minutes. |
