Cabbage and Rice Soup

Adapted for diabetics from the 'new' diabetic cookbook published in 1994
Ingredients:
1 tablespoon olive oil
1 (1 lb) package cabbage, shredded
1 cup onion, sliced thin
4 cups nonfat beef broth
4 cups fat free chicken broth
1/4 teaspoon garlic
1/2 teaspoon italian seasoning
1/2 cup brown rice
Directions:
1. Heat Oil in heavy saucepan.
2. Add cabbage and onions, cook until soft and translucent.
3. Add broth, seasonings and rice.
4. Cover and cook 20 minutes.
5. Serve hot.
