Cabbage and Potato Soup with Sausage |

Hearty, spicy soup. Can be made with sweet or spicey Italian sausage. If using plain ground pork, add fennel, anise and red hot pepper. Ingredients:
3/4 pound ground pork |
2 cups onions |
2 tablespoons tomato paste |
8 cups chicken broth (no fat or salt) |
2 pounds potatoes |
1 pound cabbage |
1/4 cup parsley |
1 cup parmesan cheese |
Directions:
1. Brown sausage, add onion and paste and continue to brown. Add de-fatted, no salt broth, stir well, add potatoes and cabbage and simmer til done. Add parsley and cheese before serving. (Potatoes can be withheld and added just before serving saved soup to keep from getting mushy). |
