Ingredients:
1 tablespoon vegetable oil |
2 cups cauliflower florets |
1 tablespoon fresh parsley, minced |
1 medium onion |
2 medium carrots |
1/4 cup pumpkin seeds, hulled |
Directions:
1. Slice onion thin; separate into rings. 2. Peel carrots and slice diagonally. 3. Saute onion in oil 1 to 2 minutes. 4. Toss in cauliflower and carrots. 5. Add a bit of water; cover and steam vegetables about 15 minutes, stirring occasionally. 6. Toss with parsley and pumpkin seeds. 7. Serve hot. |
