This may have come from Weight Watchers, but I don't really remember. Ingredients:
4 boneless skinless chicken breast halves |
2 tablespoons margarine (yogurt-based, i use brummel & brown) |
1 tablespoon fresh parsley, minced |
1/4 teaspoon dried tarragon |
1/8 teaspoon salt |
8 ounces angel hair pasta, uncooked (about 4 cups cooked) |
Directions:
1. Place a large nonstick skillet over medium-high heat until hot. 2. Coat both sides of chicken with butter-flavored cooking spray. 3. Cook chicken 5 minutes on each side or until done. 4. Combine spread and next 3 ingredients in a small bowl. 5. Place chicken on a serving platter; top evenly with spread mixture. 6. Serve immediately over pasta. |
