I have not tried these pancakes. I'm posting this for safe keeping. I found this recipe in From Babas' Kitchen To Yours. Ingredients:
1 1/2 cups all-purpose flour |
3/4 teaspoon baking powder |
3/4 teaspoon baking soda |
3/4 teaspoon salt |
1/4 cup butter or 1/4 cup margarine, melted |
3/4 cup plain yogurt |
3/4 cup milk |
2 eggs, beaten |
3/4 cup chopped toasted nuts |
1/2 teaspoon maple extract (optional) |
1 cup maple syrup |
1/2 cup butter |
Directions:
1. Mix flour, baking powder, baking soda, salt and nuts. Combine yogurt, milk, eggs, butter and maple extract. Add all at once to dry ingredients, stirring just until combined to make a thick batter. 2. Spread 1/3 cup of batter for each pancake onto hot, lightly greased, frying pan or griddle. Cook until bubbles appear on surface; turn and brown the underside. 3. Serve with hot maple butter or fresh preserves. 4. Variation: Substitute toasted coconut for nuts, and different flavored yogurt for plain yogurt. 5. Hot Maple Butter:. 6. Combine syrup and butter in saucepan. Cook, stirring constantly, until sauce is hot. Beat sauce with a rotary beater just before serving. |
