Saw this on a local cooking show...I haven't tried it yet but intend to soon ...Thought it was an interesting play on lobster and butter....Would probably work as an appetizer too. Ingredients:
meat from 1 1/4 lb. cooked lobster, diced |
1 stick butter, softened |
1 tbls. fresh tarragon, chopped |
1 tbls. fresh chive, chopped |
1 cup bread crumbs |
1 cup flour |
3 eggs |
1/4 cup cream |
1 shallot, finely chopped and butter to saute |
1/2 cup tarragon vinegar |
salt and cayenne pepper to taste |
oil to fry |
Directions:
1. In a saucepan, sweat shallot in a small amount of butter 2. Add Tarragon vinegar and reduce until almost dry 3. Let cool 4. Cook time does not include freezer time 5. With mixer, blend butter, shallot mixture, salt, cayenne, tarragon, and chive until well incorporated 6. Add lobster meat, mixing well 7. Scoop mixture into equal size balls and put in freezer 8. Set up breading station 9. Put flour in a bowl 10. Beat egg and cream together 11. Put bread crumbs in bowl 12. Coat balls in flour, then egg mixture, then bread crumbs 13. Then egg again and then breadcrumbs 14. Return to freezer for 1/2 hour 15. In a deep pot, heat frying oil to 350. 16. Fry until brown and crispy 17. Serve over mashed potatoes |
