I came across this recipe the other day while looking through an old cedar recipe box of mine.I can recall baking these goodies for my oldest son when he was three.It's from a recipe leaflet that was nearby to the Chipits display in a local grocery store...Enjoy!
Ingredients:
1 cup all-purpose flour
1/2 cup lightly packed brown sugar
1/2 teaspoon salt
1/2 cup margarine, softened
2 egg whites, slightly beaten
1/2 cup sugar
2 tablespoons all-purpose flour
1 teaspoon vanilla
2 cups flaked coconut
1 cup butterscotch chips
Directions:
1. Combine 1 cup flour,brown sugar and salt.
2. Cut in margarine until mixture resembles coarse crumbs;Press into bottom of greased 9-inch square pan.
3. Bake at 350°F for 10 minutes.Mix together egg whites,sugar,2 tablespoons of flour and vanilla in a large bowl.
4. Add coconut and butterscotch chips;Stir lightly to combine.
5. Spoon coconut mixture over baked layer.
6. Bake an additional 18 to 20 minutes;Cool before cutting into bars.
