Just a really nice bread,full of flavor and moist. Ingredients:
3eggs |
1cup oil |
2 tsp.vanilla |
2cups grated zucchini |
2cups sugar |
2cups flour |
1 tsp baking soda |
1 tsp.salt |
1 tsp.cinnamon |
1/2 tsp.ginger |
1/2 tsp.nutmeg |
1 tsp.baking powder |
1/2 cup rolled oats(quick) |
1(3oz.)pkg.butterscotch pudding mix |
1 cup nuts or raisins or 1 cup dates |
lemon frosting |
2 cups confectioner's sugar |
1/2 tsp.grated lemon peel |
2 tbls.lemon juice |
1/4 cup butter |
Directions:
1. Mix bread ingredients.Pour into 2 greased ,floured,wax paper lined pans. 2. Bake 1 hour at 350degrees. 3. Blend ingredients for lemon frosting and spread over tops of loaves after cooled. 4. Note*I baked in 2 8x4 pans and sprayed them with Baker's Joy. 5. Since ovens vary,I started checking mine with toothpick,after about 45-50 mins. 6. Cooled in pans about 15 mins.and turned out on rack to cool. 7. I didn't use any of the fruit nor did I frost the loaves. |
