The most heavenly sweet yams I have ever had. Ingredients:
6 medium yams |
1 c packed light brown sugar (can use less if desired) |
1/2 c dark corn syrup |
1/4 c heavy cream |
3 t butter |
1/2 t salt |
Directions:
1. Place yams in a large pot and cover with cold water. Bring to boil. 2. Reduce heat; cover and cook 40 to 45 minutes until yams test soft with a sharp knife. 3. Drain, cool and set aside. 4. Cut in halve. 5. Arrange yams in a single layer in a baking dish. 6. Bake 350 degrees for 15 minutes. 7. Meanwhile, in a heavy 2 quart saucepan, stir together sugar, corn syrup, cream, butter and salt. Stirring constantly, bring to a boil over medium heat and for five minutes. 8. Pour over yams and continue baking for 10 to 15 minutes longer, basting at least twice. |
