A delicious blend of butterscotch and rum, light, a great finish to a meal. Ingredients:
2/3 c. butterscotch pieces |
2 tblsp. dark rum |
3 large egg yolks |
1/4 c. sugar |
a few drops of maple flavoring |
4 large egg whites |
dash of salt |
dash of cream of tartar |
3/4 c. whipping cream(not whipped) |
for garnish |
toasted slivered almonds |
mint leaves are pretty too |
Directions:
1. Melt the butterscotch in a small pan, in a large pan of hot, not boiling, water 2. mix in the rum, let cool 3. beat egg yolks, add sugar and maple flavoring, combine with the butterscotch/rum mixture 4. beat egg whites until foamy 5. add the dashes of salt and cream of tartar, beat until firm(not stiff) peaks appear 6. beat a little of the egg white into the butterscotch mix to loosen, 7. gently fold the butterscotch mixture into the egg whites 8. whip the cream into soft peak stage 9. fold into butterscotch mixture 10. divide evenly into 4 or 6 small dishes 11. chill 2 hours 12. garnish with whipped cream, slivered almonds, mint |
