Tasty and easy butterscotch pudding. Great with whipped cream
Ingredients:
1/2c packed dark brown sugar
11/2c whole milk
2tbs plus 2tsp cornstarch
1/2c heavy cream
2tbs unsalted butter,cut in bits
1tsp vanilla
Directions:
1. Whisk together brown sugar cornstarch,and 1/4tsp salt in heavy medium saucepan,whisk in milk and cream.
2. Bring to a boil over medium heat,whisking frequently, then boil,whisking 1 min. Remove from heat,whisk in butter and vanilla. Pour into bowl,then cover surface with buttered wax paper and chill till cold,at least 11/2 hours.
