butterscotch nut bread |
1 large egg |
1 cup brown sugar |
1 1/2 tbsp. melted butter |
2 cups all purpose flour |
3/4 tsp. baking powder |
1/2 tsp. baking soda |
1/4 tsp. salt |
1 cup buttermilk |
1/2 cup chopped walnuts or pecans |
preheat oven to 350 degrees. grease an 8 inch loaf pan. beat together |
egg and brown sugar in a large bowl until smooth. add butter and beat |
to blend. sift together flour, baking powder and baking soda in a |
small bowl. stir in salt. add flour mixture to batter alternately |
with buttermilk in 2 additions. beat until well mixed. stir in nuts. |
pour batter into prepared pan and bake 60 minutes until a toothpick |
comes out clean. cool 15 minutes in pan. invert loaf onto a rack and |
cool completely. |
