this is a great bread for an afternoon tea, serve at breakfast, brunch or anytime!
Ingredients:
butterscotch nut bread
1 large egg
1 cup brown sugar
1 1/2 tbsp. melted butter
2 cups all purpose flour
3/4 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 cup buttermilk
1/2 cup chopped walnuts or pecans
preheat oven to 350 degrees. grease an 8 inch loaf pan. beat together
egg and brown sugar in a large bowl until smooth. add butter and beat
to blend. sift together flour, baking powder and baking soda in a
small bowl. stir in salt. add flour mixture to batter alternately
with buttermilk in 2 additions. beat until well mixed. stir in nuts.
pour batter into prepared pan and bake 60 minutes until a toothpick
comes out clean. cool 15 minutes in pan. invert loaf onto a rack and
cool completely.
