This makes a cake or you can cut it into bars. Ingredients:
1 1/2 c. sifted flour |
1 1/2 tsp. baking powder |
4 medium eggs (about 3/4 c.) |
2 c. brown sugar, firmly packed |
1 tbsp. butter |
1 1/2 c. chopped pecans or walnuts |
1 tsp. vanilla |
Directions:
1. Sift togheter flour and baking powder. 2. Beat eggs with rotary beater in top of double boiler just until blended. 3. Stir in the brown sugar and butter. 4. Stir constantly over rapidly boiling water just until hot, about 5 minutes. 5. Remove from heat. 6. Add the sifted flour and baking powder all at once. 7. Mix until well blended. 8. Stir in vanilla and nut meats. 9. Turn into well greased and lightly floured baking pan, 13 x 9, and bake in moderate oven 350 or until cake springs back when touched lightly in center with fingertip, 25-30 minutes. 10. Serve warm for a dessert with ice cream or whipped cream; or cut into small bars and serve when cold. 11. Cut in pan and remove with spatula. |
