Butterscotch Applesauce Cake |

This is a different kind of apple cake. Ingredients:
1/2 cup butter or margarine, softened |
1 cup packed brown sugar |
2 eggs |
1 cup applesauce |
2 cups all-purpose flour |
1 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon ground cinnamon |
1 cup raisins |
2 cups (12 ounces) butterscotch chips |
1/3 cup sugar |
3/4 cup chopped pecans |
Directions:
1. In a mixing bowl, cream the butter and brown sugar. 2. Add eggs and applesauce; mix well. 3. Combine flour, baking soda, salt and cinnamon; add to creamed mixture. 4. Stir in raisins. 5. Spread in a greased 13-in.X9-in.x2-in. baking pan. 6. Sprinkle with chips, sugar and pecans. 7. Bake at 375 degrees for 25 minutes or until a toothpick inserted near the center comes out clean. 8. Yield: 12-15 servings. |
