Tasty butternut squash with ginger,coriander and cilantro. Nice side dish.
Ingredients:
4 lbs. butternut squash,peeled,cut into 3/4 cubes (about 10 c)
1/4 c vegetable oil
2 tsp ground coriander
salt and pepper
1/2 c finely chopped crystallized ginger
1/2 c cilantro leaves
Directions:
1. Preheat oven to 450.In a large bowl,tosssquash with oil,coriander,1-1/2 tsp salt and 1/2 tsp pepper. On each of 2 large baking sheets,arrange squash in single layer and bake,turning occasionally until tender and golden brown,about 30 mins
2. .Transfer the squash to a serving bowl and toss with crystallized ginger and cilantro
