Butternut Squash Soup With Garlic Lime And Ginger |

This is another squash soup recipe but with some zing to it with the lime and garlic. We love it!!!! Ingredients:
1 tablespoon butter, or olive oil |
1 spanish onion, chopped |
4 cloves garlic, chopped |
1 tablespoon fresh ginger root, finely chopped |
1 butternut squash, peeled and chopped |
5 cups chicken broth |
1/4 teaspoon sugar |
1/4 cup lime juice |
lime slices for garnish |
Directions:
1. Melt butter over low heat in a heavy-bottomed soup pot. 2. Add onion, garlic and ginger. Cook covered for 15-20 minutes, stirring occasionally. 3. Add squash, chicken stock and sugar. 4. Bring to a boil. 5. Reduce heat to low and cook until squash is tender, 20-25 min. 6. Remove solids and place in a food processor or blender. 7. Process until smooth, gradually adding remaining liquid. 8. Float slices of fresh lime on each serving. |
