This is a Weight Watcher's recipe. Like most WW recipes, it's a bit bland so I'm working on some alternatives to make it taste better. When I've perfected it I'll probably repost it. One good thing about this version is that it was incredibly easy to make. Ingredients:
1 onion, chopped |
1 butternut squash (approx. 1 lb. peeled and de-seeded, and if you're lucky you might find one already cut at trader joe's like i did) |
2 cups apple cider |
1 cup water |
1/2 tsp. salt |
Directions:
1. Place onion, squash, apple cider and water in a pot. Bring to a boil and simmer until squash is tender (I simmered for about an hour and it turned out quite well). Puree in a blender, add salt and serve. |
