I'd never even seen a butternut squash or even sweet potatoes until I made this soup this year. I went 'hunting' for the veg and I'm so glad I made the effort.This soup goes nicely with bread of your choice. I had it with a pitta Ingredients:
1 butternut squash |
4 sweet potato |
4 parsnips |
1 medium onion |
2 pints vegetable stock |
cumin |
salt |
Directions:
1. Peel and dice the vegetables 2. Sweat in a little butter 3. Add stock 4. Bring to the boil 5. Simmer for 20-30 mins 6. Add seasoning and cumin to taste |
