Vegetarian Main Course Ingredients:
1 squash, winter, butternut |
2 carrots |
2 celery stalks |
1 medium onion |
3 roasted garlic cloves |
1 sweet potato |
32 oz. chicken broth |
1 tablespoon of low-fat sour cream |
1/2 cup soy milk |
1 teaspoon curry powder |
1/4 teaspoon red pepper |
1/8 teaspoon pumpkin spice |
Directions:
1. Bake squash and three cloves of garlic 45 minutes in 325 oven. In stockpot, saute chopped onion, carrots, celery stalks, roasted garlic, sweet potato. Add cubed squash and cover with chicken broth. Simmer for 30-40 minutes. Blend all ingredients, add milk, sour cream and spices. Stir and season as needed. |
