Full fat version of the original recipe. Ingredients:
1 cup arborio rice |
2 tablespoons olive oil |
2 tablespoons butter |
1 cup onion, chopped |
3 cups chicken stock |
2 cups butternut squash, roasted |
1/2 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. In a medium saucepan saute onion in olive oil and butter for about three minutes. 2. Add rice and stir another two minutes 3. Add one cup of broth and stir until it is absorbed. 4. Add remaining broth one cup at a time while stirring. 5. Add cubed, roasted butternut squash. 6. Serve immediately. |
