Found this on the label affixed to the squash when shipping from Turek Farms. So simple that it might just work. The recipe does not call for one of those lovely cheesey bread crumb toppings. I don't see how it could hurt anything but your waistline. Ingredients:
1 butternut squash, peeled, diced or grated |
1 cup apple cider ( may need more if you use a big squash) |
2 tbsp minced onion |
2 tsp fresh ginger grated |
1 tsp nutmeg |
1/4 tsp salt |
1/4 tsp pepper |
1 cup whipping cream |
2 eggs |
Directions:
1. In a saucepan, cover squash with apple cider. Let simmer until squash is very tender. 2. Drain the juice and reserve 3. Place squash into buttered baking dish. 4. Mix onion, seasonings, beat egg and cream . 5. Pour cream mixture over squash. 6. Add 1/2 reserved apple cider. 7. Bake at 350 until it is set. Can be made the day ahead and reheated. |
